I made Baked Mac 'N Cheese once before and it was crappy. I'm not the type to give up and thanks to Pinterest searching, I was successful! My Husband Chris couldn't stop kissing my butt about it. SOOO SOOO GOOD. I also made Tri-Tip in my Crockpot - that came out so good too. I didn't shred it like the recipe called for - I prefer it sliced. I'm trying to get into the habit of using the Crockpot because Summer is hot and I refuse to use the stove/oven.
To counter our indulgence in delicious comfort food, I cut up some fruit. I love Spring & Summer when just about every fruit is available.

But of course the very next day, I had to experiment making Carnitas in the Crockpot - I used Bone-In Pork Butt. I just used vegetable oil, water, kosher salt. I did 6 hours on low and 2 hours on high and it fell off the bone. So tender and yummy in corn tortillas! I also made Borracho Beans - not quite like San Antonio, Texas ( where my Husband is from ) but better than my last attempt at frijoles.
My cheater way of making lemonade is buying a big bottle of Simply Lemonade and adding fresh fruit. Chris loves it with strawberries, I'm all about mango. It would also be good with raspberries, pineapple, watermelon or a blend of different fruit. I've been reading about jalapeno and cilantro margaritas so maybe jalapeno and cilantro would be good in lemonade?!

One of my favorite drinks is Agua de Sandia ( Watermelon Water ) from Tacos San Pedro in Anaheim. My amiga Ruby told me about a place called El Gallo Giro that does Agua de Platano ( Banana Water ) and I really need to try it. Get out of your comfort zone and try some Aguas Frescas ( Fresh Water )

DeleteI put mango in there - dice some mango (but not too ripe) and let it sit in there for a day or two, sooo good!
Foodie Pen Pals just send eachother $15 of stuff not really available in their area - I'm sure there's Houston stuff you can send. Some people make stuff too, not sure if I'm willing to do that in the Summer when packages can get all hot.

ReplyDeleteThe crust on the mac n cheese looks so good - I love a good crust esp on pasta bakes too. Before moving to the USA I'll admit that I never really had a big liking for mac n cheese but oh my since living here it's one of my biggest addictions - haven't got around to making any myself - but I figure it's pretty easy?!
ReplyDeleteIt was good! I used Walmart brand plain bread crumbs and lots of it! :) I haven't made a pasta bake in awhile, I think that's next! The recipe I posted is really easy - the only hard thing was shredding the block cheese but it's worth it! I highly recommend her way of doing the milk mixture! Worked perfect!
